Area of Production
Villages Romanèche-Thorins and Chénas in Southern Burgundy.
Vineyard acreage : 6.5 hectares (16 acres). Exposure : East and Southeast, hillside slopes.
Soil : Granite with manganese. Porous top layer provides good drainage.
Average annual production : 48,000 bottles (360 hectolitres).
Winemaking : Grapes harvested by hand only. Whole bunches loaded in fermentation tank, no destemming, no crushing. Traditional, prolonged fermentation, lasting between 10 and 12 days. Cap totally immersed by wood grids. Excellent color and tannin extraction, for slow maturing, long lived wines. Partial ageing in oak cooperage. Bottling at 8-10 months. Minimum 2 years bottle age required before initial consumption.
