Tasting characteristics
Emerald-gold in color, dry but well-rounded, light, supple and fruity.When young, it gives off an aroma of palefleshed fruits (peaches, pears) and this evolves into the scent of white flowers (acacia), then yellow flowers (honeysuckle, broom ...) and, with age, the smell of hazelnuts, toasted almonds, honey and gunflint.
11 to 13°C is the correct temperature to serve a Saint-Véran.
As an aperitif its refreshing taste sharpens the palate but it also marries well with hors d’œuvre, delicately flavored charcuteries, oysters, shellfish, fish, snails and andouillettes.
