Viré and Clessé villages (Mâconnais), 15 km up North from Mâcon.

 : Jurassic chalky clay
Vineyard acreage
 : 541 ha whose 391 are planted in vine (vintage 1998 : 7409 hl declared)
Winemaking
 : Grapes harvested by hand and machine, crushed and juice extracted for fermentation at low, controlled temperatures, in large stainless steel tanks. Malolactic fermentation, partial or complete, depending on natural grape acidity. Bottling at 6-8 months. Ready to drink 2 months after bottling, with keeping potential 3 to 8 years.

Tasting characteristics

Emerald-gold in color, dry but well-rounded, fruity with a superb concentration. Very different from Saint-Véran, its brother, it has more honey, butter and toasted bred aromas.
11 to 13°C is the correct temperature to serve a Viré-Clessé.
As an aperitif its refreshing taste sharpens the palate but it marries well with oysters, shellfish, fish, snails and andouillettes.
Its richness allows it to marry even better with fish and white meat with sauce.
